Orange Waldorf Salad
1 cup Mandarin Oranges in light syrup, 11 oz can, drained, 2 medium Apples, unpeeled, chopped, ½ cup Celery, sliced 1/4” thick, 3 tablespoons Low Fat Mayonnaise, 1 teaspoon Sugar, 2 tablespoons Skim Milk, 1 teaspoon Lemon Peel, (fresh or ½ tsp dried), finely grated, 1 teaspoon Lemon Juice, ¼ cup chopped Walnuts, (more if you like)
Directions
Combine mayonnaise, sugar, milk and lemon peel and juice in bowl. Add orange sections, apple and celery and toss with dressing. Spoon the salad into bowls or onto plates. Sprinkle nuts over each salad. (Don’t add nuts until served) This recipe makes two large servings.
