Tomato Soup and Curried Corn

Tomato Soup & Curried Corn

1 small Onion, diced, 1 large Potato, sliced, 1 teaspoon dried Oregano, 2 cups Corn, 1 teaspoon dried Basil, 1 tablespoon Oil, ¼ teaspoon Pepper, 4 cloves Garlic, minced, 3 cups Vegetable Broth, 3 stalks Celery, diced, 1 tablespoon Curry Powder, 3 large fresh Tomatoes, 1 tablespoon Parsley,


Directions

Peel and dice tomatoes, sauté onions and garlic in oil, add tomatoes, corn, potatoes, and broth. Simmer for 30 minutes. Add spices and simmer for 30 minutes or until you get the consistency you desire.

For a smoother consistency puree the whole pot of soup.

If you use fresh herbs, use twice the dried amount. Makes 6 cups.
