Honey Barbecue Chicken

Honey Barbecue Chicken

1 can (20 oz) chunk Pineapple, 1/2 cup chopped Onion, 4 boneless, skinless Chicken breast halves, 1 tablespoon Curry Powder, ½ cup chopped Green Pepper, 1 tablespoon Oil, 18 ounces Honey Barbeque Sauce, Cooked White or Brown Rice,


Directions

Drain pineapple, reserving the juice. Sprinkle chicken with curry powder. In a large frying pan, brown chicken on both sides in oil, over medium heat. Remove and keep warm. In the same fry pan, sauté the onions, green pepper, and pineapple until vegetables are tender and pineapple is golden brown. Return chicken to the skillet.

Cover and simmer for 15 minutes or until chicken juices run clear. Immediately serve over hot rice.

Makes 4 servings.
