Fresh Peach Cobbler

Fresh Peach Cobbler Peaches: 4 cups fresh Peaches, ½ cup Sugar, 1 tablespoon Cornstarch, ¼ teaspoon Cinnamon, 1 teaspoon Lemon Juice,

Topping: 1 cup all-purpose Flour, 1 tablespoon Sugar, 1 ½ teaspoon Baking Powder, ½ teaspoon Salt, 3 tablespoons shortening, ½ cup Milk,


Directions

Pre-heat oven to 440* ~ bake 25-30 minutes.

Blend peaches with lemon juice set aside. In a saucepan add sugar, cornstarch, and cinnamon, stir and add the peaches in lemon juice. Bring to boil and stir until mixture thickens. Pour into 2 quart casserole and keep hot while preparing the topping.

Mix flour, sugar, baking powder and salt into a bowl. Cut in the shortening add milk and stir topping. Then drop by spoonfuls on top of the warm peaches. Bake and serving this warm is quite a treat!

Went to our local Farmer’s Market and bought a huge bag of peaches. What to do with a about 10 cups of peaches? I covered them with lemon juice and froze 4 cups. Made a smoothie with 2 cups and this cobbler with the remaining 4 cups.

The cobbler recipe was out of my very old and yellowed Betty Crocker cookbook. Betty has been quite a wonderful friend to my Mother and me all these years.

For the smoothie recipe I “googled” and also found a recipe of Betty Crocker’s.
