Green Chile Sauce
2 – 7 ounce cans chopped Green Chiles, 4 tablespoons unsalted Butter, ½ cup finely chopped Portobello Mushrooms, 2 tablespoons all-purpose Flour, 4 cups fat-free Chicken Broth,
Directions
Drain chiles and set aside. In a medium skillet, melt butter until bubbly and brown, add mushrooms and saute’ for 2 to 3 minutes. Sprinkle flour over mushrooms and stir into smooth paste. Slowly add broth, ½ cup at a time, blending to make a sauce. Add green chiles and simmer over low heat for 20 minutes, stirring occasionally, add a dash of salt if desired.
